A classic Umbrian cured meat product, lard is seasoned for 6 months during which time it takes on an unusual, fine flavour from the salt, vinegar, pepper, garlic and rosemary used to flavour it. The lean meat veining in the centre is the result of the two parts of the pig’s back pressed together.
