Authentic speciality from Pedrazzoli ,this Porchetta encompasses the whole deboned pig, including the head, as traditionally done in the early Roman Era. We then debone and after hand rubbing with selected spices, we sew the pig back together. We roast the product in a custom Italian oven for over 4 hours at temperatures over 500 celsius degrees. The end result is the highest quality, cooked pork product in the world. The outside results in Italian crackling, while the inside retains moisture combined with spices.
