THE HAND-HARVESTED GRAPES ARE IMMEDIATELY CRUSHED THEN THE FERMENTATION BEGINS AT A TEMPERATURE THAT IS CHECKED DAILY AND GOES FROM A MINIMUM OF 18 ° C TO A MAXIMUM OF 22 ° C. MACERATION LASTS ABOUT 7-8 DAYS DEPENDING ON THE CHARACTERISTICS OF THE GRAPE AND THE VINTAGE. THE WINE IS FERMENTED AND REFINED IN STEEL, AS IT HELPS TO PRESERVE FRESHNESS AND AROMATIC SPICES. AFTER BOTTLING, THE WINE REMAINS REFINING FOR AT LEAST 3 MONTHS BEFORE BEING RELEASED FOR CONSUMPTION.

ORGANOLEPTIC:
RUBY RED COLOR. ON THE NOSE IT HIGHLIGHTS FRESH CHERRY, BLACK BERRIES AND PEPPER. MEDIUM INTENSE WITH A WELL INTEGRATED AND BALANCED TANNIN. TO THE TASTE, HINTS OF DARK FRUITS AND CHERRIES, DARK CHOCOLATE AND SPICY NOTES.

GASTRONOMIC COMBINATIONS:
