For us, wine is a means of reaching people’s homes, tables and hearts, a way of transmitting our philosophy.
The choice to go towards a wine that is as natural as possible comes from the obvious consequence of following the cooperative’s choices based on respect for the soil, grapes and man.
The Valli Unite winery does not use invasive techniques such as sterile filtrations, clarifications or selected yeasts. The focus in the countryside is on prevention and the search for balance through soil fertility, turf care and roots / aerial parts balance. By removing these aids, the technical skills of the winemaker become fundamental.
Since 2007 we have been committed to the progressive abandonment of the many additions permitted by the organic certification system.
Since 2010, no red wine vinified at Valli Unite contains additions: the fermentations are spontaneous with indigenous yeasts, there is no filtration, no use of brighteners and clarifications, no addition of sulphites .
Since 2013, industrial yeasts have also been eliminated in white vinification, obtaining more natural wines without filtration and with the sole addition of potassium metabisulphite in small doses (total sulfur <50 mg / the second of the vintage). Not a "technical" wine but a real wine, which does not forget but, on the contrary, expresses and enhances the relationship and exchange between the earth, the sky and man. Which comes from the systemic search for a healthy and ripe grape, the result of the season and together with the knowledge of the winemaker.
