Tasting notes
Deep red wine, with mousse like a cascade of ripe strawberries, landing on the tongue in an appealing puddle of cranberries, raspberries and more strawberries, tasting as innocently juicy as a breakfast beverage.

Sparkling Sassomoro Lambrusco di Modena Modena DOC Castelvetro

From: £15.75

Sourced exclusively from vineyards within the Chiarli Family estates at Castelvetro. Vineyards are situated on ancient alluvium around the Guerro stream, at the foot of the Appennines. In this area, the land is gently undulating for the cyclical alternation between erosion of the soil and deposition of sediments. The upper stratum is around 50 cm thick and is mainly composed of silt, whilst underneath it one can find a layer of gravel.

Vinification: The grapes are pneumaticaly pressed, very gently, and left to cold macerate for 48 hours at 10 – 12 degrees C. The juice is then racked off the skins and clarified before a slow fermentation at 18 degrees C in “cuves closes”. This sealed environment forces some of the carbon dioxide (a natural by product of the alcoholic fermentation) to become trapped in the wine, creating the lightly sparkling character..

I prefer the frisson of transgressive pleasure that that comes with drinking styles that feel slightly inappropriate amid the austerity. Sparkling wines, for example, whether a decent, budget-friendly white fizz … or, to go with the season’s meaty stews, Chiarli’s vivid, ripe black cherry-filled sparkling Italian red, with its soft mousse and gentle tannic grip.
